Who’s covered here

Each profile below breaks down one pitmaster’s recognised style — their equipment, wood, technique, and the specific decisions that make their barbecue theirs — then adapts the underlying method for a backyard smoker or kettle grill. We’re not reprinting anyone’s recipe. We’re explaining the method and building our own tested version of it.

Independent research

Every technique described is drawn from multiple public sources — interviews, published books, televised demonstrations — and written in our own words.

Our own quantities

Ratios, temperatures and timings are ours, verified against USDA food-safety guidance, not copied from any single source.

Honest test status

Every recipe is labelled clearly — Research Draft, Awaiting Kitchen Test, or Kitchen-Tested. We only say “we tested” when we actually did.
