You come down in the morning and the pack of chicken thighs you meant to put away is still on the counter. Or the tray of leftover brisket never made it off the stove after the party. It looks and smells normal, and binning good meat feels like a waste. The answer is the same for both, and it is the one nobody wants to hear.

Throw it out, raw or cooked. USDA FSIS says perishable food should not sit out of refrigeration for more than 2 hours, or 1 hour when it is above 90°F, and a night on the counter is many times that. Between 40°F and 140°F bacteria grow fastest and can double in as little as 20 minutes. Some of them produce toxins that cooking does not destroy, so heating the meat to a safe temperature cannot rescue it.
Why Overnight Is Always Too Long
The 2-hour limit applies to raw and cooked meat alike, and it runs from the moment the food leaves the fridge or comes off the heat. Overnight means many hours in the danger zone, with bacteria multiplying the whole time.
Raw meat carries bacteria on its surface from the start. Cooked meat is safe when it leaves the grill, but it picks bacteria up again from hands, knives, boards and the air as soon as it is carved and served. After that, a platter of cooked barbecue on the counter behaves much like raw meat on the counter.

“It was cold in the kitchen.” A refrigerator holds food at 40°F or below, and that is the line that matters. A cool kitchen at night is almost always warmer than that, which puts the meat in the danger zone. Warm weather shortens the limit to 1 hour. Cool rooms do not lengthen it.
“I’ll cook it until it’s piping hot.” Cooking kills bacteria, but some of the toxins they produced overnight are not destroyed by cooking. Reheating leftovers to 165°F makes safely stored food safe to eat. It does not undo a night at room temperature.
