Chicken has one safe number and three places people probe wrong. The thigh reads 180°F, the breast reads 150°F, and the cut nearest the bone still looks pink, so the bird goes back on the grill until the whole thing is dry. Here is the number, where to put the thermometer, and which pink is normal.
The 60-Second Answer
All poultry is safe at 165°F internal, measured in the thickest part and away from bone, per USDA. That covers whole birds, breasts, thighs, wings and ground chicken alike. Dark meat still eats better around 175°F to 185°F, which is a texture preference, not a second safety rule. Pink meat next to a bone on a bird that reads 165°F is not undercooked.
One Number, Not Four
Beef and pork have different safe temperatures for whole cuts and ground. Poultry does not: 165°F applies to a whole roasting chicken, to skin-on thighs, to a boneless breast, and to ground chicken or turkey. That single number is the thing worth remembering from this page.

The Three Places to Probe
Breast. Go in from the side, into the thickest part, holding the probe level so the tip sits in the middle of the muscle. Straight down from the top usually pushes the tip through and into the cavity or the pan, which reads far too high or far too low depending on what it hits.
Thigh. The thickest part of the inner thigh, angled away from the bone. This is the slowest-cooking part of a whole bird, so it is the reading that decides when the bird comes off.
Wing joint. Worth a check on a whole bird if the wings are tucked, since a tucked wing shields the joint from heat.
Bone reads hotter than the meat beside it, so a probe resting against bone can show 170°F while the meat a centimetre away is at 158°F. When two spots disagree, believe the lower one.
Why Thighs Want More Than 165°F
Dark meat is worked muscle: more connective tissue, more fat, more myoglobin. At 165°F it is safe but can still be slightly rubbery near the tendons. Held at 175°F to 185°F the collagen turns to gelatin and the texture goes silky, and the extra fat keeps it from drying out the way a breast would at the same temperature.
That is exactly the opposite of breast meat, which loses moisture quickly past 165°F. If you are cooking a whole bird, this conflict is the whole problem, and the practical fix is heat placement rather than a different number: put the legs toward the hotter side of the grill and the breast toward the cooler side. Carryover: Pull Slightly Early
Chicken keeps cooking after it leaves the heat. A boneless breast typically climbs about 3 to 5°F while it rests; a whole bird can climb 5 to 10°F. Pulling a breast at 160°F and resting it 5 to 10 minutes lands it at 165°F with noticeably more juice than one held on the grill until the display said 165°F.
Resting is not optional here. Cut into a breast straight off the grill and the juice runs onto the board; give it five minutes and it stays in the meat.
The Pink That Is Not Undercooked
Three kinds of pink confuse people, and none of them mean the chicken is unsafe when the thermometer says 165°F.
Pink near the bone. Bone marrow pigment leaches into the surrounding meat during cooking, especially in young birds whose bones are more porous. It looks alarming and is harmless.
A pink ring on smoked chicken. That is a smoke ring, the same reaction seen on brisket and ribs. It is a chemical reaction with gases from the fire, not raw meat.
Pinkish juice. Juice color comes from myoglobin, not blood, and it can stay rosy in fully cooked poultry. “Cook until the juices run clear” is the single least reliable doneness test in home cooking, which is why USDA tells people to use a thermometer instead of color.
The reverse is also true and more dangerous: chicken can look completely white and still be under 165°F. Color is not evidence in either direction.
Thermometer Habits That Prevent Bad Readings
Check the instrument before you trust it. A probe in an ice-water slurry should read 32°F within a degree or two; if it reads 38°F, every chicken you have cooked this year came off early. Wipe the probe between cuts so raw juice does not ride along to the cooked pieces, and give an instant-read a couple of seconds to settle rather than reading the first number that flashes.
Leftovers
Cooked chicken keeps 3 to 4 days in the refrigerator and 2 to 6 months in the freezer for best quality; reheat to 165°F.
