Smoked Armadillo Eggs are a delicious BBQ treat made by stuffing jalapeños with cheese, wrapping them in sausage, and smoking them to perfection.

Ingredients

  • 6 large jalapeños
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 lb breakfast sausage
  • 1/2 cup BBQ rub
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat your smoker to 250°F (120°C).
  2. Cut the tops off the jalapeños and remove the seeds and membranes.
  3. In a bowl, mix the cream cheese and cheddar cheese until well combined.
  4. Stuff each jalapeño with the cheese mixture.
  5. Wrap each stuffed jalapeño with sausage, ensuring it is completely covered.
  6. Sprinkle BBQ rub over the sausage-wrapped jalapeños.
  7. Place the armadillo eggs in the smoker and cook for 2 hours.
  8. Brush BBQ sauce over the armadillo eggs and smoke for an additional 30 minutes.
  9. Remove from the smoker and let cool slightly before serving.
